I seem to always have leftover rice. Seriously. It drives me crazy! Mostly because I have no idea what to do with it and I hate to throw it out. So when I stumbled across this recipe for rice pudding I thought, "Duh, no brainer"! Whoever put it into my mind that rice pudding is a hard task should be shot. But, anyway, here's the recipe. Get ready people, you will be hooked!!!
Vanilla Coconut Rice Pudding
1 1/2 cups of cold cooked rice(if you don't have leftover rice on hand, you can actually make this with minute rice and it turns out great!)
1 1/2 cups of coconut milk
2 cups of whole or 2% milk
1/3 cup of sugar
pinch of salt
1 vanilla bean, insides scraped out or 1 tsp. of vanilla extract
Combine all the ingredients together in a saucepan and simmer over medium-low heat for 40 minutes. Allow to cool a bit and serve. If you want to make this into chocolate rice pudding...add a handful of chocolate chips and stir in til melted. Add more as desired!
